Fire Breathing Green Butter
So I whipped up a batch of guacamole last night, and just had some today after it’s had time to have a party in the bowl. Woohoo!! It’s kinda spicy! Avocado and guac gets a bad rap because it’s “full of fat”. Au contraire. It’s the good fat that’s good for your heart aka monounsaturated fat. Enjoy.

Ingredients
4 ripe avocados
juice of 1/2 lemon, juice of 1/2 lime
1 tb chopped cilantro
1/2 red or sweet Maui onion minced
1 clove garlic (or more) passed through a garlic press
1 chopped serrano chile (leave the seeds in if you like)
sea salt and black pepper to taste

Cut avocados in half, then throw out the seed. Use a spoon to scoop the avocado into a bowl and add the other ingredients. Mix it all together. I like mine chunky so I go easy with the mixing. Dish it up on meat, dip veggies in it, use it as a sandwich or wrap spread, schmear it on sprouted grain tortilla’s, cut up whole wheat pita, or eat it with a spoon.

Mango Melon Salsa
Ingredients
1/2 red pepper, diced
1/2 jalapeno de-seeded and sliced
1 TB mango or melon like honeydew. Papaya works too.
Cilantro and lime juice to taste
Mix it all up and enjoy!
