The Yummiest and EASIEST Green Salsa Ever…IMHO

We all want to eat better right? Believe me I’ve heard all the excuses, and it doesn’t have to mean boring or hard to make.¬† When you start with fresh ingredients you have the makings of kitchen gold.

I brought this recipe back from my trip to Cabo last year. It’s a spicy green tomatillo salsa that’s loaded with fresh ingredients, insane flavor, and gives you the start of an insanely yummy good for you meal.

Plus, who doesn’t like Mexican food?

Channel your inner Bobby Flay and roll up your sleeves:

  • 1-3 roasted garlic cloves
  • 1/4 white onion roasted
  • 1/2-1 roasted serrano chile (leave the seeds out to make it milder)
  • 4 roasted tomatillos
  • a bit ‘o cilantro, fresh lime juice, salt and pepper

Then throw it all into a food processor or blender until it’s well blended and dish it up.

*NOTE¬† to all you pyro’s, half the fun of making this salsa is roasting the ingredients on the grill. Turn the heat up high and leave the veggies there until they’re black. Take ’em off the grill and put them in a paper bag for 5-10 minutes. Peel the black stuff off and you’re ready to go.

Okay so you’ve got the salsa. If you’ve got some grilled tilapia, cabbage, and non-GMO corn tortillas your taco stand is officially open for business.

Another bonus with this meal…you get the fat burning power of the serrano chile. How cool is that? Eat tacos, lose inches.
